Filleted in a boneless, skinless fashion & topped with a white wine, tomato, basil sauce and lemon wedge, served with black wild rice and seasonal roasted vegetables.
Grilled Elk Tenderloin with a Wild Blueberry & Sage Port Reduction
Served with our parsnip puree and seasonal roasted vegetables
Oven Roasted Pheasant
Stuffed with Italian seasoned bread stuffing, wild mushrooms, apricots and pine nuts, served with black wild rice and seasonal roasted vegetables
Pan Seared Risotto Cakes
Topped with a wild mushroom ragu served on a bed of greens and with seasonal roasted vegetables

Skis, snowshoes, and headlamps are provided upon arrival & included in the price of dinner.
Guests should arrive at the Nordic Center between 5-5:30 PM ready to hike or ski to dinner. Dinner is served at 6:00 PM.
